We are Chef Owned; meaning we don’t abuse or over use the word “scratch”. Our talented kitchen makes all of our items from our chipotle ketchup, soups, cocktail mixes, desserts, ice cream, pasta, tator tots & MORE. Right here at Fuse Bistro.

OUR UNIQUE LOCATIONS

Located on the Corner of Palmer & Middle Streets Downtown Lowell since 2011in the old firehouse. We are walking distance from Boarding House Park, Tsongas Arena, MRT Theater, Lowell Memorial Auditorium & other local attractions.

Our Westford location is at the intersection of Powers Road & Littonton Road/110. The 2 Powers Road location is in close proximity to multiple hotels and shopping as well as 495. We have given the old building some “fuse charm” with farmhouse industrial chic decor.

ABOUT FUSE BISTRO

We have been happily serving guests in Lowell since 2011 and opened our Westford location September 21, 2017.

Chef/Owner Scott Pelletier has been cooking since his grandmother, Mimi, taught him to make split pea soup at a young age. From there he worked at the Ferry Landing Restaurant in Portsmouth, NH as a dishwasher; he moved his way up to line cook there. He attended UNH for business then moved to California Culinary Academy for his passion. He worked at Liberte, which was awarded ” 10 Best New Restaurants in the US” by Esquire Magazine.  Liberte wasownedby Elka Gilmore. Chef Scott moved then to Coconut Grove by Jeffery Inahara, a high end jazz club.

Since Pelletier moved back to Portland, ME. There he opened and sold 3 four star restaurants there. Now he is a family man with 2 kids and 2 restaurants. Fuse Bistro in Lowell has been on the Phantom Gourmet for 3 seperate recordings as well as Channel 7 “the dish”, FOXNews, MV Mag, Howl Magazine, & Boston Globe. Scott uses local ingredients to source his seasonal menu and is happy to start serving Westford.

What's your holiday schedule?
We’re closed Thanksgiving, Christmas Eve, and Christmas Day. Check back for updates on other holiday hours.
Can we bring our own wine?
We do not allow patrons to bring their own wine at this time, we do have wine “doggie bags” for unfinished bottles purchased at the restaurant
Event downtown?
If visiting before a show or event downtown, please call ahead to make a reservation to avoid a wait.
Do you have outdoor seating?
Seasonal patio seating early spring-late fall.  Smoking not permitted on our patio at anytime.
Do you do takeout?

We’re happy to prepare any of our items for you to pick up at the bar.

Street or garage parking – Leo Roy garage is located on Market St 1/2 block from our location.
